Winemaking:
The grapes were hand-picked and unloaded. In the cellar, grapes were destemmed and crushed before the must have been cooled to a temperature of 10ºC. After this period, grapes were pressed, with the must drawn off and filtered for decanting. The must's temperature was then kept at 14ºC, yeast was added, and the fermentation process was begun without maceration. Once the fermentation phase is finished, the wine was transferred in order to initiate the stabilisation and clarification process.
Grape Varieties:
Arinto, Perrum, Rabo de Ovelha, Síria, Antão Vaz
