Winemaking:
After harvesting, the grapes are sent to the winery and the vinification process begins with total destemming followed by induced thermal shock and gentle crushing. The musts contacted for a short period of time with the skins before being transferred to the stainless steel vats and starting the fermentation, of 6 days, at a temperature of 25ºC. The wine aged in stainless steel vats for 6 months in contact with fine lees having been subjected to the regular batching process until bottling.
