The fermentation is carried out in French oak barrels with controlled temperature of 26ºC. A prolonged maceration followed, the musts rested along with the stalks and the films for 15 days. There followed an eighteen-month stage in French oak barrels, followed by a 24-month bottle stage in the mythical Caves of the Cartuxa Convent before the market launch.
