To produce Duas Quintas, the grapes were hand-picked, pressed, de-stalked and then fermented in stainless steel at a temperature of no more than 25 degrees celsius. Maceration continues for long enough to produce a wine with the desired body and structure. Following malolactic fermentation in vats, 25% of the wine is aged in French oak barrels for 12 months, while the rest remains in stainless steel. The wine is bottled 18 months later.
